As an ancient grain, KAMUT flour is known to be more tolerable to those with gluten sensitivities when compared to modern wheat varieties (however, please note that while KAMUT flour's gluten content is different than that of modern wheat, it contains gluten and is not fit for those with Celiac's or extreme gluten sensitivities.
