Ingredients
- 1 egg

1/2 cup peanut butter

2/3 cup Modern Mountain Lupin Flour

1/4 cup Modern Mountain Oat Fiber or Bamboo Fiber
- 1/4 cup keto sweetener
- 1 tbsp almond milk
- 1 tsp vanilla extract
- 1 tsp baking powder
Directions
Preheat oven to 350F. Line a baking sheet with parchment paper. Set aside.
- In a mixing bowl, combine peanut butter, powdered sugar, and vanilla extract.
- Stir in flours and baking powder until it forms a cookie dough bater.
- Form 6 dough balls and place them on the baking sheet
- Bake for 10 - 12 minutes or until golden brown. Cool them down for 10 minutes on the rack.
